Happy St Patty's Day

Oh shamrock shake at McDonalds you have been calling my name.  I resisted!  Today I made my own shamrock Shakeology shake!  I need to order some greenberry to have on hand to make this whenever I want.  So yummy!

1 scoop greenberry Shakeology
2 tblsp PB2
1 tblsp SF cheesecake pudding mix 
Splash of mint extract to taste
8oz or more water
Ice

210 calories at most!

Cookie Dough Shakeology! Yes Please!
One of my favorite milkshakes has to be cookie dough.  But oh how my hips and thighs don't!

But I have found my solution....Cookie dough Shakeology!  Woohoo!


I scoop vanilla Shakeology
1tbslp cookie butter (Trader Joes rocks)
2oz almond milk
8oz water
Ice

I made this in my Vitamix and it came out slushy like a milk shake and was perfect!  So much so, that I changed my Shakeology order from straight strawberry to the triple flavor pack.  The thin mint choc Shakeology I made the day before helped in this decision too!  I'll post that recipe tomorrow! 

I'm seriously in love with this shake!  Humm may even be breakfast tomorrow morning!

Thin Mint Shakeology
Yes it's that time of year.  Cookies are on sale when you come out of nearly every store.  I never understood why they choose this time of year to sell them.  Nearly every one I know is in "get ready for summer" mode!

My favorite is the thin mints.  But I'm getting ready for summer too, so I passed on the thin mints.

Until.......I made one "Shakeology" style!  


1 scoop choc Shakeology
8oz water
1 tsp mint extract
Ice

Blended in my vitamix and man it turned out like a slushy milkshake!  Loved it!

Peaches N Cream Shakeology
Every week (sometimes several new recipes a week) I try new Shakeology creations!  Today I made a peaches n cream version.



1 scoop vanilla Shakeology
8 oz water

Brownie Batter Shakeology
So you saw my recipe for cookie dough Shakeology the other day!  It was awesome!  Well now I've got another one that is even better!

Brownie Batter!


1 scoop of choc Shakeology
1 tblsp cookie butter (Trader Joe's is awesome)
8-10 oz water
Ice

Blend till well mixed.  I use a vitamix and it comes out like a milkshake!

 Cookie Dough Yogurt!
Snacks can be a win or lose when it comes to your weight loss goals.

If you find some healthy snack choices you will win because you will continue to snack healthy!

One of my favorites is cookie dough yogurt.


1 container Greek vanilla yogurt
1 tblsp semi sweet choc chips (I want to try dark choc to be even healthier with this)
Stir till blended
This snack is 210 calories and so yummy!


Healthy Dinner for One
What do you eat when the rest of the family is eating dinner that doesn't support your weight loss goals?

My go to meal is a nice chef salad!


Just make sure to not load up on unhealthy toppings!

My salad includes lettuce, tomatoes, zucchini, mushrooms, carrots, 1/2 avocado, turkey, chicken, sprinkle of cheese, and olives!  Usually I would have either spinach or kale mixed in with it but I didn't have any.  

I also top my salad with salsa rather than creamy, calorie loaded dressings!  I love Newmans Peach salsa!  25 calories in 2 tblsp! 

Tropical Orange-Strawberry Shakeology
 
1 scoop tropical or reg strawberry Shakeology (I used tropical for this one today)
1/2 cup OJ
1/2 cup water
1 frozen orange (I had blood oranges in my freezer so that's what I used)
Blend till mixed 

It was very yummy and so filling.  I could barely finish it.
 
So I got my vitamix yesterday and I'm in love!  My parents have had one for years and I've begged for one of my own.  I got my anniversary present early and got one.

Up first.....tomato soup from the vitamix recipe book that came with it.  


1 large tomato quartered
1/4 cup chopped onion
1/4 shredded cheddar
1 cup chicken or vegetable broth (I used chicken)

Put in vitamix in order listed and start on low and then switch to high till steaming, 6-7 minutes.
It was a little strong on the onion flavor, so next time I will got lighter on the onions.


Then this morning I made a smoothie with my Shakeology.

Blood Orange, Mango, strawberry Shakeology.
1 pack strawberry Shakeology, 8oz water, 2oz mango juice and 1 blood orange (mine was frozen)
I blended on low for maybe 30-45 seconds.  Soooooo good!

Not sure what I am making tomorrow.  I'm still trying to decide.

Oh Yummy Reese's Cheesecake Shakeology and Healthy Egg Salad
Today was another yummy day.

Breakfast was a Reese's Cheesecake Shakeology.  1 scoop choc Shakeology, 1/8 cup PB2, 2 tblsp SF cheesecake pudding mix (just the powder) and 8oz water.  I made this at work just in my shaker cup and I didn't get a picture.  :(

Snack was a Greek yogurt with berries. 

Lunch was an egg salad wrap made with one hard boiled egg, 1/2 cup LF cottage cheese, lil bit of pickle relish and a whole wheat wrap.  I also put sliced tomatoes on the wrap.  I had a side of celery with peach/mango salsa and some strawberries and blackberries.


Snack 1/4 cup cinnamon almonds and grapes.

Dinner was 1 cup whole wheat noodles with butternut squash spaghetti sauce.  I had a side of green beans and a salad with ginger dressing.  I forgot to get a picture of this one too.  Boo on me!

Yummiest Day
I had a wonderful day of eating.  Need to eat this good every day!

Breakfast was a blueberry waffle with cookie butter and an egg white muffin with a little bit of cheese, kale and turkey sausage.


Lunch was a strawberry cheesecake Shakeology!  One strawberry Shakeology packet, 2 tblsp of sugar free cheesecake pudding mix (just the powder), 2 oz almond milk and 6 oz of water.  Throw in a blender with a few frozen strawberries and yummy!



Dinner was breakfast for dinner at our house.  While the rest of the family enjoyed pancakes I had eggs and avocado.  I didn't want that heavy of carbs on my tummy at night.  I had an egg white omelet with Swiss cheese and spinach topped with salsa, and a whole egg baked in the whole of half an avocado. It was so good.  Eggs and avocados are my new favorite combinations.



My snacks today were a half a cup of LF cottage cheese with a half cup of pineapple and 1/4 cup of cinnamon almonds and choc covered almonds mixed together!

I did my P90X3 workout and drank lots of water!  Great day living the healthy lifestyle!

I have seen and heard so many people talk and post about Quinoa lately.  I kept saying I must try this but never tried any.  Until today!  Oh my......what was I waiting for?  This stuff is awesome!  So yummy and healthy too!

I thought it was going to be hard to fix too.  Nope easy peasy.  I boiled 1/4 cup in chicken broth for about 15 minutes.  Fluffed it with a fork after it boiled.  While it was boiling I chopped the tops off three big tomatoes and scrapped the insides out and discarded them.  I chopped the tops up and mixed in a little bit of cheddar shredded cheese and some grated Parmesan.  After the quinoa was boiled I added it to the tomato/cheese mix and stuffed the tomatoes.  I baked them for about 15 minutes at 350.  Soooooo good.  I had some marinated mushrooms and green beans too. I'm saving the third tomato for a snack tomorrow!  I can not wait to see what I'm going to make next with quinoa!  Stay tuned as I will post those creations here too!  

 
So in eating healthy I'm finding that I'm obsessed with eggs and avocado.  I try to enjoy them together once a week.  They are so good together!

Today's lunch was an egg salad pita made with guacamole instead of mayo.  Oh my was it good.  Recipe was so simple too!

1/2 whole wheat pita
1 whole hard boiled egg and 1 extra hard boiled egg white
1/2 a 100 cal pack of guacamole 

Mix together the eggs and guacamole and put inside the pita.  I used smaller pitas so I got enough egg salad to fill both halves.  So I ate one today and I will eat one tomorrow too.

I enjoyed it with fresh fruit, rice cakes and salsa, a small laughing cow 25 cal cheese wedge and some celery!

 
I'm so excited to have finally found a bento box.  Or what I consider a bento box.  I've been wanting to pack cute little lunches for myself and my little girl.  Today was my first day using it.  With snow days all last week it sat staring at me from the counter.  I was so excited that I had my Shakeology for breakfast  so I could have my bento box lunch at work.

I put fruits, veggies, protein, dairy and a healthy fat in it.  Celery, tomatoes, mushrooms, with a little bit of guacamole, strawberries, grapes, a hard boiled egg and a cheese wedge.  It was yummy and every bit as exciting as I hoped it would be.

I got the bento box at Target for around $7 I think.

Nothing like clean eating!  The other day I roasted a whole chicken in the crock pot.  So what's a girl to do the next night for dinner but have a chicken sandwhich.  I didn't want it on bread.  I wanted it healthier!  So I said hey I've got portabella's in the fridge.  So I took some chicken and sliced avocado and put it on two portabella's.  Had a side salad with salsa as my dressing and some sliced carrots.  Was it filing?  Oh yes it was!  I couldn't even eat the whole mushroom bun!  I love healthy eating!

 
 
So tonight I made my omelets for the week.  All I have to do is pop them in the microwave for a quick warm up and I'm ready to go!  I might even try one cold tomorrow for my mid morning snack!

Egg whites (I buy mine by the carton)
Turkey Sausage
Shredded Cheese

I put 3 tablespoons of egg whites in each muffin cup (I used a 6 cup muffin tin for this time but I have used a mini muffin tin also)
Less than 1/4 cup of turkey sausage crumbles in each cup
Sprinkle of cheese on top

Bake at 350 till set.  Check around 10 minutes

Yummy!   I really did make 6, but two of them were still cooking.  They didn't set all the way so I put them back in the oven for a few more minutes. 

 
 

Healthy Egg Salad
I love egg salad.  I could eat it every day.  But with all that mayo I wouldn't be a size 4 for very long!  Today I made some changes so I could enjoy it.  I hope you like it too!

1 whole hard boiled egg and 1 egg white (discard other yolk)
1 spoonful of plain Greek yogurt 
Tiny bit of relish
Squirt of mustard (can you tell I'm not much for measuring when I make recipes)

Mix together and spread on whole wheat low carb tortilla 

I had a side of pineapple salsa (Trader Joes rocks) with some pretzel sticks and cheddar rice cakes!

Yummy!



Wow, just when I thought this strawberry Shakeology couldn’t get better…..wham I out did myself!  Today I added 1cup unsweetened almond milk, 1/2 of a peach mango veggie pouch (you know those new squeeze pouches the kids love) and some ice.  Oh my goodness!  WOW!!!!!!

Portabella Melt!
My dinner tonight was so amazingly good!  I made a portabella melt and it was delicious.  So much so I'm going to make a mini one for lunch tomorrow!

1 whole wheat pita 
Baby portabella's (I didn't put an amount because I kept cooking them till I covered the top of my pita)
Soy sauce and garlic
Less than 1/4 cup Italian cheese blend shredded

I sauted the portabella's in coconut oil (or butter if you must) and soy sauce and garlic
Spread the mushroom on top of the pita and sprinkled cheese on top.
Broiled for 2 minutes!

Around 320 calories!  I had a salad with only veggies and olives and sesame dressing also!

It was heavenly!

 
Breakfast has been said to be "the healthiest meal of the day"!  And guess what.....it is!  If you start your day off right you are more likely to make smart choices the rest of the day!  I always include a source of protein with my breakfast as it will keep me fuller longer than just carbs.  My favorite is eggs!  I will have one whole egg and one extra egg white with some turkey sausage and just a pinch of cheese with a side of pink grapefruit (another favorite of one).  When your pressed for time you can cook your egg in the microwave for less than a minute in a microwave safe bowl or mug.  If you want your eggs scrambled, scramble before and again half way thru cooking.  Also treat your bowl/mug before you put your egg in.  I prefer coconut oil but you can use cooking spray.  Stay tuned tomorrow and I will share my omelets for a week recipe so you will have eggs for breakfast all week long!  
 
 




Portabella Pizza

3 Portabella Mushrooms Cleaned
Crumbled Turkey Sausage 1/4 cup
Chopped Tomatoes
Shredded Italian Cheese Blend 1/4 cup

Add sausage and chopped tomatoes to inside of Portabella's
Sprinkle cheese ontop
Bake at 350 till cheese melts

 
 
Black Forest
 
1 pack Choc Shakeology
1 Cup Frozen Cherries
1 Cup water or Unsweetened Almond Milk
Blend till mixed
